Bok Choy Peanut Ramen

Last season one of our favorite things to get regularly in our CSA was Bok Choy so I was happy to see it in the first box which was picked by the farmer. I wanted to try something different with it but also needed it to be simple as we were in the middle of beer week and cooking time was being sacrificed for drinking time (girls got to have priorities).
I decided to make a dish with peanut sauce and quick cooking noodles since we love all sorts of peanut sauce dishes. The dish came together fast and was on the table in about 20 minutes while still being full of flavor. I will definitely be making this combo again, adding more veggies to it as they come into season. It is also a great dish to make in hot weather because it only involves boiling water in one pan and the cooking time for the noodles is short, thus keeping your air conditioner from working overtime.
Bok Choy Peanut Ramen
- 3 small heads of Bok Choy
- 3 Scallions
- 3 teaspoons Chinese 5 Spice Powder
- 1 cup Creamy Peanut Butter
- 1 1/2 Tablespoons Sesame Oil
- 2 Tablespoons Soy Sauce
- 1 Tablespoon Rice Wine Vinegar
- 2 packages Ramen Noodles, flavoring packet discarded
- Bring a large pot of water to boil. While waiting for the water to boil, thinly slice the bok choy and scallions. Set aside.
- Combine the next 5 ingredients in a bowl and microwave for 30 seconds.
- After microwaving stir until the sauce is blended.
- When the water has boiled, drop in noodles and stir regularly to separate. Cook for 3 minutes.
- Drain noodles and toss with bok choy, scallions and peanut sauce. Enjoy!
